Pumpkin Brownies: a delightful autumn treat

With the arrival of autumn comes the joy of pumpkin season! Celebrate the flavours of fall with these rich and soft pumpkin brownies. The addition of pumpkin not only enhances the festive spirit but also contributes to a moist and delectable texture. This recipe is perfect for anyone seeking a dessert that’s bursting with flavor.

Ingredients:

  • 150 g pumpkin purée
  • 150 g dark chocolate (70% cocoa)
  • 100 g unsalted butter
  • 150 g brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 100 g all-purpose flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • Optional: chocolate chips or chopped nuts for added texture

Preparation:

  1. Preheat the Oven: Set your oven to 180°C (350°F) and grease or line a 20×20 cm square baking tin with parchment paper.
  2. Melt the Chocolate: In a saucepan over low heat, melt the dark chocolate and unsalted butter together, stirring occasionally to avoid burning. Alternatively, you can melt them in the microwave in 30-second intervals. Once melted, remove from heat and let it cool slightly.
  3. Combine Wet Ingredients: In a large mixing bowl, whisk together the pumpkin purée and brown sugar. Add the eggs and vanilla extract, mixing until fully combined. Gradually fold in the melted chocolate mixture until you have a smooth batter.
  4. Mix Dry Ingredients: In another bowl, whisk together the all-purpose flour, cocoa powder, ground cinnamon, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, gently folding with a spatula or using a hand mixer until fully incorporated.
  5. Add Extras (Optional): If desired, fold in chocolate chips or chopped nuts for added crunch.
  6. Bake: Pour the batter into the prepared tin, smoothing the top with a spatula. Bake for 25-30 minutes, or until a skewer inserted into the center comes out with a few moist crumbs. Avoid overbaking to ensure the brownies remain fudgy.
  7. Cool and Serve: Allow the brownies to cool in the tin before cutting them into squares. Enjoy this delightful autumn treat!
