February is a great month to nourish our body with seasonal food, rich in Vitamin C, such as organic peppers from Menorca. For this reason, we have the pleasure of sharing with you a very easy and healthy recipe; grilled tuna and egg stuffed red peppers.
Ingredients:
- 2 large red peppers
- 160 gr of light tuna in olive oil
- 2 hard-boiled eggs
- Grated cheese
- Oregano
- A pinch of salt
Preparation:
- Preheat the oven to 180ºC Cut the peppers in half and remove the seeds.
- Put them in a tray and in the oven until they soften.
- While they are baking, prepare the filling by mixing the tuna and the hard-boiled eggs cut into small pieces.
- Take the peppers out of the oven and fill with the mixture.
- Add the grated cheese on top and sprinkle with oregano to taste
- Put the stuffed peppers back in the oven until the cheese is gratin, and voila!
